Lemon Butter Cake with Lemon Cream Cheese Frosting and Lemon Curd

Today is my elder son's birthday. He likes lemon cream cheese frosting, so I decided to make this lemony yummy cake for him.

Lemon Butter Cake with Lemon Cream Cheese Frosting and Lemon Curd

柠檬奶油蛋糕配柠檬奶油芝士糖霜和柠檬酱


Ingrediengts:


125g      Butter (Softened)

200g      Sugar 

4             Eggs (Grade A)

1 Tbsp   Lemon zest (2 lemon)

300g      All purpose flour (Take 2 tbsps flour and replace with 2 Tbsps of Corn Flour)

2 tsps     Baking powder

1/2 tsp   Baking Soda

1/2 tsp   Salt

2 tsps     Vanilla Essence (Optional)

30ml       Lemon juice 

2 Tbsps   Corn oil

240ml     Milk


Lemon curd : 

65g         Lemon juice 

65g        Sugar

2             Egg Yolks

1             Whole Egg

1/4 tsp   Salt

1 Tbsp   Lemon zest

30g        Butter(cold)

Yellow Food Colouring (optional)

Lemon Cream Cheese Frosting:

115g   Butter (Softened)

225g   Cream Cheese (Softened)

60ml   Lemon Juice

1 tsp   Lemon Zest

200g   Powdered Sugar

Method:

  1. Preheat oven at 180 C. Grease three cake tins  8" round pan.
  2. Sift the flour, baking powder, baking soda and salt. 
  3. Whisk the butter and sugar until it combines.
  4. Add in eggs one at a time and mix well.
  5. Add in lemon juice and lemon zest, mix well.
  6. Add in sifted flour in few batches and mix well. 
  7. Lastly, add in milk and mix well.
  8. Pour the batter onto a greased cake tin and bake for 22-25 minutes or test it with a skewer and it comes out clean.
  9. Leave the cake in the pan for 10-15 minutes.
  10. Remove the cake from the pan and let them cool completely.


Assenble the cake:

  1. Apply the cream cheese frosting onto the first layer of cake. Make a dent in the cream cheese frosting, fill in with1 and 1/2 Tbsp of lemon curd. 
  2. Do the same process with the two layers of cake.
  3. Frost the cake with the cream. Keep the cake in the fridge for half an hour.
  4. Frost the cake again with lemon cream cheese frosting. Pipe the remaining cream cheese frosting onto cake and decorate the cake.
