Lemon curd 柠檬酱

I forgot to take the photos of making the cream. 😅 Ha, I'll be uploading the pictures next time... 😉 

The picture below was the lemon curd that I made. It is creamy and lemony.😘



Lemon curd 柠檬酱


Ingredients:

65g         Lemon juice 

65g        Sugar

2             Egg Yolks

1             Whole Egg

1/4 tsp   Salt

1 Tbsp   Lemon zest

30g        Butter(cold)

Yellow Food Colouring (optional)


Method:

  1. Mix all the ingredients (except lemon zest and butter) with a hand whisk. 
  2. Cook on medium heat, keep stiring until curd form. Don't over cooking. Once it reach a right consistency, remove from heat.
  3. Add in cold butter and mix well.
  4. Now add the lemon zest and a tiny drop of Yellow Food Coloring to punch up the lemon-y color.
  5. Transfer to a bowl and cover with a cling wrap (touch the curd) to avoid the surface gets harden.
