Traditional Mooncake( Taro Paste Filling) 传统月饼(芋泥馅)

Today is my forth or last batch of baking mooncakes. Tomorrow, I will making snow skin mooncake, because snow skin mooncakes can't keep long. 








Traditional Mooncake( Taro Paste Filling)传统月饼(芋泥馅)

Ingredients (Mooncake skin):

140ml    Golden Syrup

50ml      Peanut oil

5g          Alkaline water/lye

200g      All Purpose Flour


Filling:

200g  Yam Paste(Homemade)*

50g     Roasted Walnuts(chopped)

~ Mix well.

200g  Yam Paste(Homemade)*

50g     Dried Cranberry(chopped)

~ Mix well.


Egg wash:

1 egg yolk + 1 Tbsp water


Method:

1. Mix the mooncake skin ingredients evenly, cover with the lid, and then leave for 2 hours.

2. Divide the yam paste filling into 85g each ( for 125g mold) and set aside. Divide the yam paste filling into 30g each (for 50g mold) and set aside.

3.  a) For 125g mooncake mold, wrap a portion of filling with a portion of 40g of mooncake skin,  rub with some plain flour, and put it in a mooncake mold, knock out and place it in a baking tray.

    b) For 50g mooncake mold, wrap a portion of filling with a portion of 20g of mooncake skin,  rub with some plain flour, and put it in a mooncake mold, knock out and place it in a baking tray.

4. Preheat the oven to 200C, bake for 5-8 minutes, take it out, coat with egg wash. Reduce the heat to 160C, and bake for another 5 minutes, take it out, coat with egg wash again. Then, continue to bake for 15 minutes or until it is colored.

7.After 2 days of oil return, it will be shiny, the crust will be shiny and soft.
