Taro/Yam Paste Filling (mooncake)芋泥馅料(月饼馅)

Mooncake festival is approaching. Since my daughter doesn't like the traditonal bean paste filling, so I decided to make my own.  There is one big yam in the fridge, and some purple sweet potatoes too, so I quickily take them out, and started to make the yam paste.😊

This is a less sweet and less oil version taro paste. If you like it sweeter, you can add in more sugar to your liking. If you like buttery taro paste, just substitute butter(60g) for oil(70g).



Taro/Yam Paste Filling (mooncake)芋泥馅料(月饼馅)


Ingredients:

800g taro

85g-100g purple sweet potato

130g  caster sugar

1/4 tsp salt

70 g corn oil


Method:

1. Peel the taro and purple sweet potato, wash and cut into pieces.

2. Pour into the pot and steam for about 30 minutes until the taro is soften.

3. Add sugar, salt, smash the taro and purple sweet potato until a fine and smooth.

4. Pour into a non-stick pan, add corn oil (corn oil can be added in 2-3 times), stir fry slowly over medium low heat.

6. Stir fry until it is slightly lumpy and then turn off the heat.

7. Let the filling cool down a bit, wrap it in cling wrap, and store in an airtight container. If not used up, it can be stored in the freezer.


材料:

800克       芋头

85克-100克    紫薯

130克      白糖

1/4茶匙  盐

70克        玉米油 


做法:

1.芋头和紫薯去皮, 洗净, 切成块。

2.倒入锅里,蒸30分钟左右至芋头软烂。

3.加入白糖, 盐,压碎芋头和紫薯。

4. 倒入不粘锅里,加入玉米油(玉米油可以分2-3次加入), 中小火慢炒。

6.炒到稍微抱团后就可以关火了。

7.馅料稍微凉一下,裹上保鲜膜,密封冷藏。如果,没有用完,可以冷冻保存。
