Matcha Yogurt Mousse Cake

I baked this Matcha mousse cake for my beloved daughter's birthday celebration.

This mousse cake is light and delicious. We like it ! 😘





Matcha Yogurt Mousse Cake

Ingredients :

3         Egg  yolks

1/2 tsp  Vanilla extract  

35g        Oil

35g        Milk

60g       Cake flour 

8g         Matcha Powder


3       Egg whites 

Dash of  lemon juice/ vinegar

50g   Castor sugar


Matcha yogurt mousse:

50g fresh milk

300g plain yogurt

50-60g sugar

10g gelatin

200g whipping cream (30-35% fat)

6g matcha powder

20g warm water

Method:

  1. Mix yogurt with sugar and stir until sugar dissolve, set aside.
  2. Mix gelatin powder with milk, warm it in microwave for 10 seconds, stir until gelatin has dissolve.
  3. Mix gelatin and milk mixture with yogurt, stir well, set aside.
  4. Beat whipping cream until firm, set aside.
  5. Divide the yogurt mixture into two portions, about 220g -230g.
  6. Add in half of the whipped cream (100g) into yogurt mixture, mix well and pour onto the cake. Put in the freezer for 15 minutes.
  7. Dissolve the matcha powder with warm water.
  8. Mix matcha mixture into remaining yogurt mixture. stir well. Add in the remaining whipped cream and stir well.
  9. Pour the matcha yogurt mixture onto the set cake, and refrigerate for 4 hours until set.
