I baked this Matcha mousse cake for my beloved daughter's birthday celebration.
This mousse cake is light and delicious. We like it ! 😘
Ingredients :
3 Egg yolks
1/2 tsp Vanilla extract
35g Oil
35g Milk
60g Cake flour
8g Matcha Powder
3 Egg whites
Dash of lemon juice/ vinegar
50g Castor sugar
Matcha yogurt mousse:
50g fresh milk
300g plain yogurt
50-60g sugar
10g gelatin
200g whipping cream (30-35% fat)
6g matcha powder
20g warm water
Method:
- Mix yogurt with sugar and stir until sugar dissolve, set aside.
- Mix gelatin powder with milk, warm it in microwave for 10 seconds, stir until gelatin has dissolve.
- Mix gelatin and milk mixture with yogurt, stir well, set aside.
- Beat whipping cream until firm, set aside.
- Divide the yogurt mixture into two portions, about 220g -230g.
- Add in half of the whipped cream (100g) into yogurt mixture, mix well and pour onto the cake. Put in the freezer for 15 minutes.
- Dissolve the matcha powder with warm water.
- Mix matcha mixture into remaining yogurt mixture. stir well. Add in the remaining whipped cream and stir well.
- Pour the matcha yogurt mixture onto the set cake, and refrigerate for 4 hours until set.
