Purple Sweet Potato Basque Burnt Cheesecake

Today is my eldest son's birthday. Since I've the ingredients on hand, so I make this burnt cheesecake for him.😘

















To make this cake, follow the recipe bellow, just change the yam to purple sweet potato.😉

芋泥:200g蒸熟的芋头、5-8g紫薯粉、35g糖、250-300g牛奶

(材料比较随意,想要芋泥稀一点的可以多加牛奶,或者加奶油,颜色按照喜好调整紫薯粉的量,

喜欢甜的可以多加糖)

1、所有材料混合压成泥

2、可以过筛一下,成品更细腻


巴斯克(6寸):250g奶油奶酪、60g糖、2个蛋、150g 淡奶油、15g低粉

1、室温软化的奶油奶酪+糖搅拌顺滑

2、分次加入2个鸡蛋,搅拌均匀

3、加入奶油,拌匀,加入低粉,拌匀

4、把面糊过筛到模具中

5、烤箱230度,25分钟

6、晾凉后放入冰箱冷藏过


芋头奶布丁

芋头100g,吉利丁6g,牛奶100g,糖适量,紫薯粉适量

1.将吉利丁溶于3茶匙水中,加入少许牛奶,搅拌均匀,再倒入剩余的牛奶搅拌均匀

2.倒入芋头糊搅拌均匀

3.筛入模具冷藏凝固


奶酪+淡奶油布丁:

奶油奶酪110g,糖30g,淡奶油160g,吉利丁

1. 将奶油芝士和糖搅拌至糖溶化

2. 将吉利丁溶解在3茶匙水中,加入奶油芝士面糊中搅拌均匀,然后倒入淡奶油搅拌均匀。

3. 倒入奶油芝士混合物中搅拌均匀

4. 倒入芋头层,冷藏凝固


装饰:

200g  鲜奶油


Ingredients:

Taro paste: 200g steamed taro, 5-8g purple potato powder, 35g sugar, 250-300g milk

(The ingredients are quite random. If you want the taro paste to be thinner, you can add more milk or cream. The color can be adjusted according to your preference. The amount of purple potato powder can be adjusted. If you like sweet, you can add more sugar)

1. Mix all the ingredients and mash them

2. You can sift them to make the finished product more delicate


Basque (6 inches): 

250g cream cheese, 64g sugar, 2 eggs, 110g cream, 7g low flour

1. Mix the softened cream cheese + sugar at room temperature until smooth

2. Add 2 eggs in batches, stir well

3. Add butter, mix well, add flour, mix well

4. Sift the batter into the mold

5. Preheated oven 230 degrees, bake for 25 minutes

6. Cool and put in the refrigerator overnight


Taro milk pudding: 

100g taro, 6g gelatin, 100g milk, appropriate amount of sugar, appropriate amount of purple potato powder

1. Dissolve gelatin in 3 tsp water, add a little milk, and stir until incorporated, then in remaining milk and mix well

2. Pour into the taro paste and stir well

3. Sift into the mold and refrigerate to solidify


Cheese + whipping cream pudding:

110g  cream cheese, 30g sugar, 160g whipping cream, 6g jelatin

1. Mix the cream cheese and sugar until the sugar desolve

2. Dessolve gelatin in 3tsp water, add into cream cheese batter and mix well, then pour in whipping cream and stir well.

3. Pour into cream cheese mixture and stir until incorporated

4. Pour onto the taro layer and refrigerate to solidify


Decorate:

200g whipping cream
