This coffee bun is crispy on the outside and soft on the inside and it's delicious. It's sweet, savoury and buttery flavour and honestly, addictive too! 😘
Coffee Bun/Rotiboy/Papparoti
Ingredients:
(A) Bread Dough:
340g Bread flour
60g All purpose flour
100ml Warm milk
120g Plain Yogurt
1pc Egg (A)
50g Room temperature unsalted butter
40g Sugar
4g Salt
8g Instant dry yeast
(B) Filling:
72g Unsalted butter (Cold~12 pieces of 6g each)
(C) Coffee Topping:
75g Room temperature unsalted butter
75g Sugar
4g Salt
1pc Egg
80g Bread flour
4g Instant coffee
2 Tbsps Warm water
Method:
1. Mix all ingredients (A) into the mixing bowl and knead for 15mins (except butter).
2. When dough is made, add butter and knead for another 15mins till dough is stretchy.
3. Use a big bowl, grease the inside with a thin layer of oil. Put in the dough inside the bowl and cover the bowl with a damp cloth or plastic wrap. Let proof for one hour or until the dough has doubled in size.
4. While proofing, make the filling. Cut the butter in cube and keep in the fridge.
5. Once the dough is ready, divide them equally into 12 portions. Cover with plastic wrap and leave for 15 min .
6. Flatten the dough then add a cube of butter in the middle of each ball and form into a ball.
7. Lined it up into a baking pan and keep it at a warm place for 1 hour to rise.
Making coffee mixture:
1. Mix instant coffee powder with 2 tbsp of hot water.
2. Add softened butter and sugar into another bowl and mix until combined.
3. Add in 1 egg and mix well.
4. Add in the coffee mixture.
5. Sift in flour and fold.
6. Put into a piping bag and pipe the mixture over the buns in a spiral shape until it covers the top of the bun.
7. Bake at preheated oven 180 C for 15- 18 minutes depending on your oven.
