Apple Cake

It’s been a while since I baked an apple cake! Baked apple cake on a whim for afternoon tea snacks. 😘





Apple Cake 


Ingredients: (6 or 7 inch Springform Cake Pan)

Apple Cake Ingredients: 

2 Apples, peeled and sliced

2 tablespoons  Butter (25g)

1 tablespoon  Lemon Juice (15g)

1 1/2 tablespoons  Sugar (20g)


Cake Dough:

2 Large Eggs

130g  Sugar 

100g  Greek Yogurt

120g  Milk 

60g    Vegetable Oil

1 tsp Vanilla Extract 

200g   All Purpose Flour

1 1/2 tsps  Baking Powder 


Method:

  1. Preheat the oven to 356F (180C).
  2. In a large mixing bowl, add eggs, sugar, greek yogurt, milk, vegetable oil, vanilla extract and mix. Sift in flour, baking powder. Mix until incorporated.
  3. Melted the butter in microwave for 20 seconds.
  4. Slice 2 apples thinly. Toss with sugar. 
  5. Pour half cake batter to a cake pan lined with parchment paper. Add some apple slices on top. Then pour the remaing batter. Add the remaining apple slices and drizzle the melted butter.
  6. Bake in the oven for 50-60 minutes ( it depends the pan size and oven used). I used 6 inch pan.
  7. Cool to room temperature.
  8. Sprinkle some powdered sugar before serving.
