Moist Chocolate cake
Ingredients:
Chocolate cake
1 Cup flour (130g)
1/2 Cup cocoa powder (50g)
1 Cup sugar (200g)
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
65g (1/3 cup) vegetable oil
1 large egg
1 tsp vanilla extract
125ml (1/2 cup) buttermilk*
125ml (1/2 cup) hot coffee
* add 1 tsp vinegar in a measuring cup then pour milk until it reach 1/2 cup. Stir to combine. Then let it rest for at least 5 minutes before using it.
Chocolate ganache:
100g chocolate ( I used 150g)
100ml Whipping cream ( I used 150g)
10g butter ( I used 20g)
Instructions:
1.Lined 6"x 6" or 7"x7" Square baking pan with parchment paper.
2.In a bowl, sift in flour, cocoa powder, baking soda & baking powder together. Then, add in sugar & salt. Whisk to combine completely.
3.After that, add in egg, buttermilk, oil & vanilla extract. Whisk until combine & lump free.
4.Pour hot coffee into the batter & whisk to combine. The batter is thin in consistency.
5.Pour the batter into the baking pan & bake it at 170C for 50-60 minutes or until baked completely (wooden skewer come out clean when inserted into the centre of the cake.
6.Let it cool for 10 minutes then take out from the pan & cool it completely on wire racks.
7.Once cool completely, pour the chocolate ganache on top of the cake. Let it rest in the fridge until the ganache set.
8.Once set & cool, cut the cake.
Chocolate Ganache:
1. Put chocolate & whipping cream together in a bowl. Then heat it & stir until melt completely.
2.Then put in butter, stir until fully melted & combine.
3.Set aside.
