Basic Milk Toast ( No need kneading machine )

This bread loaf requires no machine, no kneeding and no overnight fermentation. 😊 Just need some folding methods and proofing process to make. Simple and easy! 




Basic Milk Toast ( No need kneading machine )


Ingredients:(450g each)

250g   High gluten flour.

40g     Sugar. ( I used 30g)

3g       Salt 

200g   Milk 

3g       Dry yeast 

20g     Unsalted butter 


Method:

  1. Mix in all ingredients (except butter) and mix till all dried ingredients are incorporated. Rest for 20 minutes.
  2. Add in butter until the butter is completely incorporated. Rest for 20 minutes.
  3. First fold: Fold the dough each sides x 2 times. Rest for 20 minutes.(with a spatula)
  4. Second fold: Fold the dough each sides x 2 times. Rest for 20 minutes.(transfer the dough to table)
  5. Third fold: Fold the dough each sides x 2 times. Rest for 20 minutes.
  6. Divide the dough into 2 or3 equal portions. Round the dough and cover the dough and rest for 15 mins. 
  7. Shaping:  roll the dough into a rectangle, and swiss roll up( do the same with the rest dough).  Rest for 30 minutes. 
  8. Second shapping: roll the dough into a rectangle, swiss roll up. Put into a loaf pan.
  9. Cover the dough and ferment for 1-2 hours or until the dough fills 90% of the loaf tin. (It depends on the room temperature)
  10. Preheat the oven at 180°C.
  11. Brush milk on the surface.
  12. Bake for 30-35 minutes.( It depend on the oven, please adjust the baking time accordingly.)
