Yogurt Bread

This yogurt bread is crispy on the outside and soft on the inside. The bread is tasty with a hint of yogurt. I added some dried cranberries and cheese slices to the dough. You can omit them.

In my opinion, the dough was very wet and sticky. So, it was a bit difficult to handle the dough. I suggest to use less yogurt in this recipe. Or add more flour in this recipe. Anyway, it is all depends on the flour you use.




Yogurt Bread

Ingredients:

250g greek yogurt  

42g honey

3g instant yeast

1 egg

250g all-purpose or bread flour (200g bf and 50g apf)

3g salt

30ml olive oil

Dried Cranberries and Cheese slices (optional)


Method:

1. Yogurt and honey, mix well.

2. Add instant yeast, wait for 5 minutes.

3. Add 1 egg, mix well. 

4. Add  all-purpose or bread flour, salt and mix well.

5. Add olive oil, knead the dough til a dough is formed. 

6. Rub a bit of oil, cover and rise until double size. 

7. Move the dough to a work surface, sprinkle some flour,  deflate the air bubbles. 

8. Shape the dough into a ball. Cut in half. Shape each piece into a ball,  cover and rest for 15 minutes. 

9. After 15 minutes, flaten the dough and roll up the dough from the long side,  pinch the edges, pinch close the ends, place on a baking pan. Repeat with the other piece of dough.

10. Cover and rise until double size (about 45 minutes) 

11. Brush some water, sift some flour, make diagonal cuts on the dough.

12.  Bake for 20-25 minutes at 375F/190C 

13. Place on a rack to cool down. Slice the bread .
