It is been a while that I didn't bake carrot cake. 😅
This carrot cake is easy to make, perfectly moist, and topped with an easy homemade cream cheese frosting. It's effortless to make and tastes incredible.
This cream cheese frosting is light , less sweet and with a hint of lemon. It goes Perfectly with the cake.😘
Walnut Carrot Cake 核桃胡蘿蔔蛋糕
Ingredients:
2 Large egg
80g Brown sugar
80ml Vegetable oil
1/2 tsp Vanilla essence
125g All purpose flour
2 tsp Baking powder
1/2 tsp Baking soda
1/2 tsp Cinnamon powder
1/4 tsp Sea salt
180g Carrot shredded (1cup )
40g Toasted walnuts (chopped)
Cream Cheese Frosting 奶油乳酪糖霜
120g cream cheese
30g powdered sugar
70ml heavy cream
1/2tsp lemon juice
Directions:
For the cake:
1. Preheat the oven to 180C. Grease a 16cm cake pan.
2. Sift the flour, baking powder, baking soda, and cinnamon powder together in a bowl.
3. In a large bowl whisk together the oil, sugar, eggs, vanilla, and beat well. Then mix in the sifted flour mixture into the batter.
4. Finally, add in the grated carrots, roasted walnut and mix until incorporated.
5. Pour the batter into the pan.
*Place the pan in the middle rack of the oven and bake for about 45 - 50 minutes or a toothpick inserted in the center comes out clean.
*If using Air Fryer, preheat the Air fryer for 5 minutes at 170C. Bake the cake for 30 - 35minutes
6. Cool the cake before frost the cake.
For the frosting:
1. Cream the cream cheese, lemon juice and powdered sugar.
2. Pour in the whipping cream and beat until fully incorporated and smooth. Do not over beating the cream.
Assemble the Cake:
1. Slice the cake into 3 equal layers.
2. Place a layer of cake on the cake board. Apply some cream cheese frosting onto it and spread evently.
3. Repeat the same method until all layer of cakes are done.
4. Decorate cake as desired.
