Chocolate Cake
Ingredients:
130g Sugar
2 Egg
170g Flour
40g Cocoa powder
50g Oil
1 tsp Baking powder
130 ml Boiling water
Chocolate cream:
30g Butter
40g Milk
80g Dark Chocolate
Topping:
Chopped Pecan
Instructions:
- Preheat oven to 180°C. Grease an 8-inch ring cake pan.
- Sift dry ingredients into a bowl and set aside.
- Beat sugar and egg till fluffy.
- Add in sifted flour in three batches and mix well.
- Add hot liquids and gently stir until there are no lumps.
- Pour into pan and bake for 40 minutes or until a toothpick inserted in the center comes out clean.
- Cool completely in the pan and frost, glaze, or dust with powdered sugar.
- Heat the milk and butter over low heat until the butter has dissolved. When you see some bubling at the side of the pan, turn off the heat.
- Pour into chopped chocolate bowl, and stir till the chocolate melts. Set aside.
- Pour over cooled chocolate cake and keep in the fridge to set before cutting it. After 5 minutes, sprinkle some chopped pecans onto cake and keep in the fridge again. ( The cake can be kept at room temperature, but the weather now is very hot, so I put the cake in the fridge.)
