Cherry Cake 樱桃巧克力蛋糕

Since I have some cherries in the fridge, so I made this cherry cake with the left over cake sheets.

This Cherry cake is so delicious. It took a lot of work to make this cake, but it was worth it.







Cherry Chocolate Cake 樱桃巧克力蛋糕


Ingredients :

4             Egg  yolks

1/2 tsp  Vanilla extract  

35g        Oil

35g        Milk

60g       Cake flour 

8g         Matcha Powder/ 10g Cocoa Powder


3       Egg whites 

Dash of  lemon juice/ vinegar

50g   Castor sugar


Cherry sauce:

120g  Cherries( Deseed and chopped)

40g    Sugar

10g    Lemon juice


Creamcheese Whipped cream Frosting:

100g  Cream cheese

300g   Heavy cream

25g     Sugar

1 tsp   Vanilla essence


Chocolate cream:

50g   Milk chocolate

5g     Unsalted butter

20g   Milk ( Add in moderately to get the right consistency)


Decoration:

Boiled cherry pulp

Boiled Cherry sauce


Method:

1. Slightly whisk egg yolks and add in oil & milk and mix well.

2. Add in sifted flour( + Matcha powder or Cocoa Powder) into the batter, mix well.

3. Add in vanilla essence and mix well. Set aside.

4.  Beat egg whites until frothy then add in lemon juice and beat it till foamy, add in sugar gradually and beat it till firm peaks.

5.  Fold meringue into the egg mixtures in three portions.

6. Tab the pan to remove air bubbles.

7. Bake in the bottom third rack at 160 for 15 minutes, then 40 minutes @ 150°C.

8. Once it done, remove from oven, tab the pan to release air and invert the cake pan, and let it cool  completely on a rack. 

9. While baking, cook the cherry sauce. Mix all the cook over medium low heat until the sugar dessolved and the sauce has became thicker. Romove from heat, strain the sauce, set aside to cool.

10. Lightly beaten the cream cheese and sugar. Pour in the whipping cream and whisk until fluffy and firm.

11. Milk the chocolate over a bowl of hot water. Add in butter and mix well. Slowly add in milk and stir until you get a right consistency( not too runny).

12. Assemble the cake and decorate it as you like!
