Strawberry Layered Sponge Cake草莓海绵蛋糕

 My daughter requested strawberry cake for her birthday celebrations. So, I decided to decorate it with a vintage decorations. The cake looks very beautiful and elegant.








Strawberry Layered Sponge Cake 草莓海绵蛋糕


Ingredient: (make a 18cm round cake)

3        eggs (seperate the yolk and white)

80g    caster sugar

1g      salt

120g  cake flour (remove 2 tbsp flour and replace with corn flour)

15g    corn flour (2 Tbsp)

40g    corn oil

40g    fresh milk

1/2 tsp  Vinegar

1tsp vanilla extract


Whipped Cream Frosting:

400g  non-dairy whipping cream/ heavy cream

150g  cream cheese

1/3cup powdered sugar

1tsp vanilla extract

Some strawbery slices

 

Method: 

  1. Sift cake flour and corn flour, set aside.  Pre-heat oven to 140C. 
  2. Lightly beat the egg yolk, add in salt and oil, mix well.
  3. Add in milk and 1tsp vanilla extract, mix well.
  4. Add sifted cake flour into the batter. With a spatula, gently fold in the flour until well blended.
  5. With an electric mixer, whisk egg whites, vinegar till foamy, then add in  sugar gradually and beat until the batter double in volume and is stiff peak.
  6. With a spatula, mix about 1/3 of meringue into the batter and mix well. Fold in this mixture into the remaining batter. This method will help to ensure the meringue will be fully blended and at the same time will not deflate the batter.
  7. Pour the batter into the pan and bake for 30 mins at 140C,  then bake for another 10 minutes at 160C or until a skewer inserted in the centre comes out clean. Unmold and cool completely.
  8. Assemble the cake.


Whipped Cream frosting: 

  1. Combine the cream cheese, sugar, vanilla extract in a stand mixer.Whisk on medium speed until smooth. While the mixture is still whipping, slowly pour in the heavy cream. Stop and scrape the bottom of the bowl a couple of times while you continue whipping until the cream can hold a stiff peak.
  2. Slice the cake horizontally into 3 layers. Place one of the cake layers on a cake plate.
  3. Spread a layer of mulberry jam or strawberry jam or whipped cream over the layer. Arrange rings of strawberry slices to cover the whole layer. Fill with some more whipped cream. Top with the second cake layer.
  4. Repeat the steps for the second cake layer. Top with the third layer.
  5. Spread the whipped cream over the top and side of the cake. Decorate as desired.
