Moist Chocolate Cake

This Chocolate cake is super moist and chocolatey. It topped with a soft chocolate frosting that enhances the chocolate flavor. 😊




Moist Chocolate Cake

Ingredients:

1 cup all-purpose flour (120gm)

1 cup granulated sugar (200gm) ~ I used 180g

1/4 cup unsweetened cocoa powder (25gm)

1 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

1 large egg (or 50gm curd or yogurt)

1/2 cup  oil (108gm)

1/2 cup milk(120gm)+ 1 tbsp vinegar.

1/2 cup hot water(118gm) + 1 tbsp coffee .


Chocolate Frosting:

5 tablespoons butter(75gm)

1/4 cup unsweetened cocoa powder(25gm)

1.1/2 cup powdered sugar(150gm)

3 tablespoons milk(45gm)


Method:

  1. Preheat oven to180℃. Lined 8-inch baking pans. Set aside.
  2. In the large bowl, stir together flour, sugar, cocoa, baking soda, baking powder and salt.
  3. Mix milk with vinegar, stir well.
  4. MIx Hot water with coffee powder, stir well.
  5. Add milk mixture, hot coffee water, vegetable oil and whisk until smooth.
  6. Add in egg and mix well. Batter will be very runny.
  7. Pour batter into pan and bake on middle rack of preheated oven at 180℃ for about 30-35 minutes, until toothpick inserted in centre comes out clean with just a few moist crumbs attached.
  8. Let it cool about 10 minutes before removing from pans. Than cool completely.
  9. In the meantime, prepare a chocolate  frosting. Melt the butter over low heat.
  10. Add in cocoa powder and stir, cook for 1-2 minute. Remove from heat. 
  11. Add in powdered sugar and milk. Mix until smooth.
  12. Pour the chocolate frosting all over the warm cake. Chill in the fridge overnight.
