Radish cake/ Loh Pak Koh / 萝卜糕

This savoury steamed Radish cake is my hubby favourite kuih. In fact, it is one of my favourite kuih too. I can eat it in place of my main meal.😄






Radish cake/ Loh Pak Koh / 萝卜糕


Ingredients:

2             White radish (550g- 600g) -peeled and grated

350g       Rice flour (粘米粉)

30g         Cheng flour (澄粉) 

1 Tbsp    Sugar 

Some     Smoked bacon meat (chopped)

3 large    Shiitake mushrooms (soaked and chopped) 

80g         Dried shrimp (soaked and chopped)

10           Shallots (sliced)

550g      Water (including the white radish juice squeezed from the white radish)

1 Tbsp    Oyster sauce

1/2 tsp   Salt

A little     Salt and pepper 

Some chopped spring onions and fresh coriander, red chilli.


Method:

  1. Peel the radishes and grate them. Wash the dried shrimps, soak them until soft, and cut them into coarse grains (or use small dried shrimps and leave them uncut). Mince shallots and macerated the Shiitake mushrooms, then chop. 
  2. Mix rice flour, cheng flour, salt and sugar in a large bowl, add water and mix well for later use.
  3. Heat up 2 tablespoons of oil, sauté the minced shallots until fragrant, dish out , set aside. 
  4. Heat another 2 tablespoons of oil, sauté the dried shrimps until fragrant, dish out, set aside. 
  5. Use the remaining oil, sauté diced bacon and shiitake mushrooms over medium heat.
  6. Add shredded radish and stir well. Sprinkle with a little salt and pepper, 1 tablespoon of oyster sauce. Cook until shredded radish is soft. Turn to low heat, then add rice flour batter, stir to form a half-cooked paste, then add aome fried shallots and fried shrimps that has been sautéed, and mix well.
  7. Pour the batter into a greased 8-inch cake pan, steam over high heat for 45 to 50 minutes. Insert a chopstick into the center of the radish cake, if there is no batter sticking to the chopsticks, it means it is fully cooked. While the raish cake is still warm, sprinkle some fried shallots and fried shrimps that has been sautéed on top. Then sprinkle some chopped spring onions, coriander and red chilli on top.
  8. Once cooled, slice and serve.
