Since I have some leftover sweet potato puree, so I decided to make these delicious fried nian gao balls.
Gradually add in water to the dough, until you get a smooth dough which is not too hard or too soft dough. Flour absorbency may vary, so don't add water all at once! I add in water with a spoon.
The size of nian gao ball is depend on the size of the nian gao cube. If bigger cube of nian gao, so you will need to use more dough.
I made it with all my leftover orange sweet potatoes. So, you can use the same recipe as purple sweet potato nian gao ball ya!
Fried Nian Gao Ball 年糕番薯球
Ingredients : (Can be double the amount)
Purple Sweet Potato Nian Gao Ball
150g Purple Sweet Potato puree
25g Sugar
40g Glutinous Rice Flour
30g Rice Flour
1 tbsp Cooking Oil
15-18g Water
Hardened Nian Gao. Cut into 1/2inch cube
Orange/Yellow Sweet Potato Nian Gao Ball
210g Orange/Yellow Sweet Potato puree
30g Sugar
50g Glutinous Rice Flour
40g Rice Flour
1 tbsp Cooking Oil
22-28g Water
Hardened Nian Gao. Cut into 1/2inch cube
Method:
- Mix in sugar while the sweet potato puree is still hot.
- Add in both flour and mix well.
- Add in oil and kneed well.
- Slowly add in water with a spoon, until you get a smooth dough then stop add the water.
- Weigh the sweet potato dough, 15g each. Round it and flatten it, wrap in a cube of nian gao, seal and roll into a ball.
- Heat up oil and fried for 2 minutes. Stir constantly for even heating.
- Dish up and best served while the balls are still warm.
