Zebra Sponge Cake

My friend asked me to make a cake to give to our primiry teacher (bestie's mother). She is over 80 years old now, so I decided to make this less sweet, less flour, less oil and without buttercream cake for her. But, unfortuately, we didn't get a chance to give it to her...😓 Hope we can pay her a visit next time.






Zebra Sponge Cake (Round Pan 18cm )

Ingredients:

3 Egg Yolk

35g Oil

55g Milk

55g Cake Flour

1/2tsp Vanilla Paste

1tbsp Cocoa Powder

15g   Hot water


3 Egg Whites

1 tsp  Lemon juice

45g Sugar


Method:

1. Slightly whisk egg yolks and add in oil & milk and mix well.

2. Add in sifted flour into the batter, mix well.

3. Add in vanilla essence and mix well. Set aside.

4.  Mix cocoa powder with hot water, mix well.

5.  Beat egg whites until frothy then add in lemon juice and beat it till foamy, add in sugar gradually and beat it till firm peaks.

6. Fold meringue into the egg mixtures in three portions. Divide the  batter into two portions. Add cocoa powder mixture into one portion of batter.

7. Scoop alternatively into a lined pan.

8.Tab the pan to remove air bubbles.

9. Pour hot water into larger pan.

10. Bake in the bottom third rack at 160°C for 60 minutes with Water bath method .

11. Once it done, remove from oven, tab the pan to release air and take out the cake from the pan immediately, and let it cool  completely on a rack
