Mini cakes ( Matcha & Red Velvet flavour)

This year I made something different of cake to celebrate Christmas. These mini cakes has different flavour fillings and with cream cheese whipping cream. 






Mini cakes ( Matcha & Red Velvet flavour)


Ingredients:

~ For Matcha flavour:

3 egg yolks

10g sugar

30ml oil

45ml milk

55g cake flour

10g matcha 

Few drops 

3 egg white

55g sugar


~ For Red Velvet flavour:

3 egg yolks

10g sugar

30ml oil

45ml milk

55g cake flour

10g Cocoa Powdwer

Few drops red food colouring


3 egg white

55g sugar


Method:

  1. Slightly beat the egg yolk and sugar.
  2. Mix in oil and milk a, and mix well.
  3. Sift in flour and matcha powder and mix well. *( For red velvet cake, mix in cocoa powder and flour first, then add in coloring)
  4. Preheated oven 170C
  5. Beat egg white till stiff peak. In between, add in sugar in two batches.
  6. Mix 1/3 beaten egg white into egg mixture, mix well.
  7. Pour into remaining beaten egg white and mix well with a spatula.
  8. Pour in a pan, tap a few times to release air bubbles.
  9. Pop into preheated oven at 170C and bake for 20- 25 minutes.
  10. Remove from pan, let cool on the rack.
  11. Cut out shape and assemble the cake.
