Christmas Fruit Cake

This year I baked a less sweet and less mix fruit in cake. 😘 The cake is delicious. It's best to consume it the next day or even better after one to  two weeks or a month. Every 2-3 days, brush some brandy onto cake and wrap it up again. Repeat the process until the day you are ready to  cut it to share with family and friends. 😊




I baked two loaves of fruit cakes. 👆One big and one small.😄

We eat the small loaf of cake first, 👆this one is less alcohol.😊

Christmas Fruit Cake

Ingredients:

300g     Mix fruits 

200ml   Rum (or brandy or whisky or juice of choie) 

~ soak them overnight or 2-3 days if preferred. ( I soaked them for 3 days)

180g       Unsalted butter   

110g       White  Sugar   

40g         Brown Sugar

4 pcs      Whole egg   (55g+- per egg)

1/2tsp    Sea salt   

300g       Cake flour   

1tsp        Baking powder   

80ml       Fresh milk   

1tsp       Vanilla extract   

2tsp       Orange zest   

2tbsp      Orange  juice

1/4tsp    Nutmeg powder

1/2 tsp  Cinnamon powder


Pan size:    9 inch square pan or 21x6x8cm  pan x2) and I used 22x10x10cm  pan x 1 and 16x8x8cm pan x1*


Bake at 180°C / 350°F  for  60-70 minutes (9" pan) and 40-50 minutes (21x6x8cm pan x2)
