Tiramisu cake 提拉米苏蛋糕

Tiramisu is a pudding-like dessert. It has coffee, liquor, a super creamy custard and just a little chocolate. Absolutely delicious! 

Although it may look complicated to make, Tiramisu is actually a very simple Italian dessert that you can easily make at home. It is preferred to make the tiramisu the day before serving so that all the flavours are fully absorbed and is firm enough to slice easily.

虽然看起来做起来复杂,但提拉米苏其实是一种非常简单的意大利甜点,在家就可以轻松制作。 提拉米苏最好提前一天制作,这样所有的味道都能被充分吸收,而且足够凝固,可以很容易地切成片。





Tiramisu cake (square pan about 9 inches)

Ingredients:

20-24        Finger biscuits

300g    Mascarpone or cream cheese (room temperature )

3           Egg yolks

60g      Caster sugar

200g    Whipping cream

80g      Espresso (or 10g instant coffee powder + 70g water instead)

15g      Rum or Coffee liquor or Whiskey or brandy (optional if you don't drink alcohol)


提拉米苏蛋糕 (方形烤盘约9寸)

材料:

20-24根    手指饼干

300g    马斯卡彭芝士或奶油奶酪(室温)

3个       蛋黄

60g      细砂糖 

200g    淡奶油 

80g      意式浓缩咖啡 (或10g速溶咖啡粉+70g水代替)

15g      朗姆酒或咖啡酒或威士忌酒或白兰地 (不饮酒可不加)


Method:

  1. Prepare the espresso coffee with the liqueur or liquor,  set it aside. *If using liquor, add some sugar to taste for additional sweetness. 
  2. In a double boiler, combine egg yolks and sugar. While whisking constantly, cook for 8-10 minutes to cook the egg yolks. Mixture should be smooth. Set aside and let cool. 
  3. In a medium bowl, beat the mascarpone or cream cheese until smooth. Mix in egg mixture and mix well.
  4. Whip the chilled whipping cream till soft peaks. Add in cheese mixture with a spatula and fold gently to incorporate. 
  5. Prepare 8 or 9  inches  springform pan (place parchment paper or plastic wrap around the sides).
  6. To assemble the tiramisu, dunk lady fingers into espresso mixture for 2-3 seconds and line the bottom of a 9"x9" baking dish with them. Spread half of mascarpone mixture on top and an offset spatula helps spread it evenly.  
  7. Rrepeat another layer of soaked lady fingers and then spread remainder of mascarpone mixture on top. Flat the cream nicely on top with an offset spatula. 
  8. Cover and refrigerate for AT LEAST 6 hours! It's best to chilled in the fridge overnight and served the day after. 
  9. A generous dust layer of unsweetened cocoa powder is the last and unmissable touch for this Tiramisu cake.
