Since, there is still a remaining cream cheese in the refrigerator, so, I decided to bake this simple and easy to make burnt cheesecake for my hubby's birthday celebration.
Coffee Basque Burnt Cheesecake 咖啡巴斯克芝士蛋糕
Ingredient材料 :6" Round cake tin (6寸 圆形蛋糕模具)
3 tsp Espresso/Coffee Powder 浓缩/即溶咖啡粉
3 tsp Hot Water(3茶匙 热水
300g Cream Cheese 奶油奶酪 *( you can use 250g in this recipe)
80g Sugar 细砂糖
2pcs Egg 鸡蛋
12g Tapioca/Corn Flour 木薯/玉米粉
130g Whipping cream 动物性鲜奶油
Directions:
1. Lined the base and sides of a 6" round tin with baking paper and preheat oven at 220°C.
2. MIx the coffee powder with hot water and set aside.
3. Mix well cream cheese and sugar
4. Beat in eggs one at a time, mix it well
5. Pour in coffee mixture and mix well.
6. Pour in Whipping cream and mix well.
7. Fold in sifted corn flour, mix well.
8. Sift the batter(optional) and pour batter into baking tin.
9. Bake at 220°C for 25 mins, or until deeply golden brown on top and still very jiggly in the center.
10. Once done, remove from oven and let the cheesecake cool completely . Chill in the fridge for 4 hours or overnight.
