Carrot Cake 红萝卜蛋糕

A simple, sweet, moist, flavorful, and topped with lemony cream cheese frosting! The batter has toasted crushed wanuts, raisins, shredded carrots (of course), and lots of spices! 

No need electric mixer, just mixed everything with a whisk and bake, simple and easy!😘





Carrot Cake  红萝卜蛋糕 

Ingredient 材料 : (6" cake pan )

2 pcs   Eggs 鸡蛋  (grade A)

80g    Brown sugar 黄糖

50g    Corn oil 玉米油   

1 tsp     Vanilla essence 香草香精

100g    All purpose flour 中筋面粉   

1 tsp    Baking powder 泡打粉  

1/2 tsp    Baking soda 食用苏打粉    

1/2 tsp     Salt 盐   

1 tsp     Cinnamon powder 肉桂粉 

1/2 tsp  Nutmeg powder 豆蔻粉

1/4 tsp  ginger powder 姜粉

150g    Grated carrot 红萝卜丝

40g    Raisins 葡萄干 

30g    Roasted walnut 烘香核桃   (chopped)

  

 Cream Cheese Frosting 奶油奶酪霜:

50g    Unsalted butter (softed)软化无盐黄油   

200g    Cream cheese (softed) 软化奶油奶酪 

30g    Icing sugar (powdered sugar) 糖粉   

1 Tbsp  Lemon juice 柠檬汁


Directions:

For the cake:

1. Preheat the oven to 180C. Grease 6" cake pans.

2. Sift the flour, baking powder, baking soda, salt and all spices powder  together in a bowl.

3. In a large bowl whisk together the oil, sugar, eggs, vanilla, and beat well. Then mix in the sifted flour mixture into the batter. 

4. Finally, add in the grated carrots, roasted walnut and raisins and mix until incorporated. 

5. Pour the batter into the pan. Place the pan in the middle rack of the oven and bake for about 40 to 45 mins and a toothpick inserted in the center comes out clean. Cool the cake before frost the cake. 


Cream cheese frosting:

1. Cream the cream cheese, butter and icing sugar together until fully incorporated and smooth.  

2.  Add in lemon juice and beat well.
