This Purple Sweet Potato Spiral Mantou is easy to make and so appealing to eyes. My sons don't like to eat "kosong" buns ( without fillings buns), so I added red bean paste for the filling.
Purple Sweet Potato Spiral Mantou 紫薯螺旋馒头
Ingredients : ( make 8 pcs)
White dough:
200g All purpose flour
3g Yeast
35g Sugar
100ml Warm Milk / Water
1 tsp Corn Oil ( optional)
Purple dough:
200g All purpose flour
3g Yeast
35g Sugar
12g Purple Sweet Potato Powder
100ml Warm Milk / Water
1 tsp Corn Oil ( optional)
Filling :
200g Reb Bean Paste
Method:
- Mix all ingredients and knead until smooth then rest the dough for 1 hour.
- Repeat the above steps to the purple dough, and rest the dough for 1 hour.
- Roll both dough into large and thin rectangle. Brush some water on the white dough, and layer the purple dough on top the white dough. Slightly roll out the dough.
- Roll out the remaining dough, and cut out flower shape with a flower press mold.
- Brush some water and paste onto the purple dough. Roll again to flatten the flower dough onto the purple dough.
- Flip over the dough, Fill in filling and roll the two layers up to a cylinder.
- Divide the dough into 10 pieces.
- Proof for 20 minutes.
- Steam on medium heat for 15 minutes. When the time is up, turn off the heat and simmer for 5 minutes before opening the lid.
Note:
- I made 12 pieces and the buns seems not stable sittng on the steamer because a bit too thin slice. So I suggested make it into 10 pieces (thicker slice), so the buns can sitting nicely on the steamer.
