Creamy Garlic Butter Salmon

Ingredients:

6 salmon fillets

Salt and pepper, to season

2 teaspoons oil

2 tablespoons butter

6 cloves garlic, finely diced

1 medium yellow onion, diced

1 tablespoon plain flour

1 cup water or 1/3 cup white wine (optional)*

100 g cherry tomato, halfed

200ml  cooking cream

Origano, salt and black pepper, to taste

Few dashes of worcestershire sauce

Basil leaves or baby spinach leaves

Instructions:

  1. Heat the oil in a large skillet over medium-high heat. Season the salmon filets on both sides with salt and pepper, and sear in the hot pan for 5 minutes on each side, or until cooked to your liking. Once cooked, remove from the pan and set aside.
  2. Melt the butter in the remaining juices leftover in the pan. Add in the garlic and fry until fragrant (about one minute). Fry the onion in the butter. Add in flour and saute for one minute. Pour in the water or white wine (if using), and allow to reduce down slightly. Add the cherry tomatoes and fry for 1-2 minutes to release their flavours.
  3. Reduce heat to low heat, add the cooking cream, and bring to a gentle simmer, while stirring occasionally. Season with worcestershire sauce, origano, salt and black pepper to your taste.
  4. Add in the basil leaves and the salmon fillets back into the pan, and allow sauce to simmer for a further minute until the sauce thickens.

Note:

  • You may add more water to get more gravy.
  • This creamy garlic butter salmon can be served with rice or pasta, or a bed of veggies.

Happy Cooking!
