Lemon Butter Cake

This Lemon Butter Cake is super soft, moist and velvety. The cake is not very sweet and goes well with the lemon sugar glaze. Perfect!😘

I made a 7.5 x 3.5 inch loaf tin and 4 inch round tin cakes with this recipe.  You can make one  8 inch round tin or 8 x 4.5 inch loaf tin cake.






Lemon Butter Cake

Ingrediengts:

160g      sugar 

1 tsp      lemon zest 

110g      softened butter 

30ml      veg oil

2            eggs 

30ml      lemon juice 

180g      all purpose flour

1 tsp      baking powder

1/2 tsp   salt

120ml   milk 


Lemon Sugar Glaze:

80g icing sugar 

25ml lemon juice

~ Just mix well and pour onto cake.


Method:

  1. Preheat oven at 180 C. Grease the cake tin  (8" x 4.5") or 7" round pan.
  2. Sift the flour, baking powder and salt. 
  3. Whisk the butter and sugar until it combines.
  4. Add in eggs one at a time and mix well.
  5. Add in lemon juice and mix well.
  6. Add in sifted flour and mix well. 
  7. Lastly, add in milk and mix well.
  8. Pour the batter onto a greased cake tin and bake for 40- 45 minutes or test it with a skewer and it comes out clean.
  9. Leave the cake in the pan for 10-15 minutes.
  10. Remove the cake from the pan and let them cool completely.
