Banana Muffins 香蕉杯子蛋糕

There is one banana left on the counter, so I used it to make banana muffin.





Banana Muffins 香蕉杯子蛋糕

Ingredients:

2              Eggs, cold from fridge

100g       Caster sugar

150g       Ripe bananas, mashed ( 1 large banana)

150g       All purpose flour (take out 1 Tbsp flour and replace it with corn flour)

2 Tbsp    Milk

1/2 tsp   Cinnamon Powder

1/2 tsp   Baking powder

1/4 tsp   Baking soda

100g       Corn oil

1/2 tsp    Vanilla essence

A pinch of salt


Method:

  1. Preheat oven to 180°C.
  2. Sieve flour, baking powder & soda together.  Set aside.
  3. Beat cold eggs, sugar, salt, vanilla essence & banana at max speed in a mixer till thick and stiff. 
  4. Fold in flour and mix well. 
  5. Add in corn oil and milk, mix well.
  6. Pour into cupcake liners for about 90% full. Reduce the oven heat to 160°C, and bake for 15-18 minnutes or until golden brown at middle rack.
