Soft Bread Loaf

When I browse the youtube looking for recipe, I saw this simple method of making loaf bread. So, I followed the steps and the result was great. The loaf is soft and fluffy. 😉




Soft Bread Loaf

Easy Bread Making:

Ingredients:

185g    milk

5g        instant dry yeast

25g      sugar 

5g        salt

270 g   Bread flour 

30 g     soft butter at room temperature


Method ( Hand knead):

  1. Mix milk and yeast, mix well.
  2. Add in sugar and salt, and mix well.
  3. Add in bread flour and stir with a spatula.
  4. Add in butter, use hand and lightly mix for one minute. Rest the dough for 30 minutes(covered).
  5. After 30 minutes, do streching and folding for about one minute.
  6. Then hit the dough on the counter top and pull it back. Repeat this step until you get a smooth dough.
  7. Cover the dough and first fermentation for 30 minutes.
  8. After 30 minutes, strech and fold the dough(4 sides). Cover the dough and 2nd fermentation for one hour or until the dough is double in size,
  9. Divide the dough into three pieces. Round it and rest for 15 minutes.
  10. After 15 minutes, roll the dough, make three folds and roll it . pinch the seal and place in the loaf pan. Do the same method with the rest of the dough.
  11. Final fermentation,  the dough has risen about 90% of the pan ( depend on the loaf pan you use). It takes about one hour.
  12. Brush some milk on the surface and bake in pre-heated oven at 190C for 30 minutes.


*When using a stand mixer (depending on the stand mixer specifications)

1. Add all ingredients except butter.

2. Mix on low speed for 2-3 minutes.

3. Mix 5-6 minutes on medium speed

4. Add butter.

5. Mix 5-6 minutes on medium speed
