Today I'm baking Pide. A pizza-like savory bread baked with potato, mozzarella cheese and sprinkled with dried pasley. The stuffing is base on your liking. 😊
This bread is called Pide [Pee-day] , a Turkish bread traditionally cooked in hot clay ovens. Originating from Turkey, Pide is an oval-shaped flatbread baked with various combinations of toppings or stuffings.
Cheese Garlic Potato Pide/Mozzarella Cheese Bread
Ingredients:
Dough:
1-1/2 tsp of active dry yeast
1 tsp sugar
125ml (1/2 cup) of warm water
250g (2 cups) all-purpose flour or bread flour
60g Tangzhong *
1 tsp salt + 1 tsp garlic powder
3 tbsp olive oil/vegetable oil
Filling:
2 medium potatoes, boiled.
Salt, pepper, garlic, chili, follow your taste.
1/2 cup of shredded mozzarella cheese for the filling
1 - 2 cups shredded mozzarella cheese for topping
Method:
- Mix all the ingredients and knead until a soft smooth dough is formed. Rounded it.
- Proof for one hour.
- Prepare the filling. Boil the patatoes. Smashed the boiled potatoes. Mix with seasoning and mozzarella cheese.
- Divide the proofed dough into four equal portions and rounded it.
- Roll each dough into a rectangle shape. Then roll up the dough edges inward to shape the dough like a boat. Press both ends to seal.
- Put on a baking tray. Put the potato mixtures to each dough and add shredded mozzarella cheese on top. Sprinkle some dried parsley on top.
- Cover and rest for 30 minutes.
- Meanwhile, pre-heat the oven at 200˚C.
- Brush some egg yolk on the dough.
- Bake for 20 minutes at 200˚C preheated oven.
