Carrot Cake Recipe 红萝卜蛋糕 (10")

This is my favorite recipe for carrot cake.  It's simple, sweet, moist, flavorful, and topped with cream cheese frosting! The batter has toasted crushed wanuts, shredded carrot (of course), and lots of spices! 






Carrot Cake Recipe   红萝卜蛋糕(10")


Ingredient 材料 :

100g    Roasted walnut 烘香核桃    

100g    Raisins 葡萄干 

350g    Grated carrot 红萝卜丝   

280g    Plain flour 普通面粉   

1 tsp    Baking soda 食用苏打粉    

1 tsp    Baking powder 泡打粉    

250g    Corn oil 玉米油    

130g    Caster sugar 细砂糖  

130g    Brown sugar 黄糖 

1 tsp     Salt 盐   

1 tsp     Cinnamon powder 肉桂粉 

1/2 tsp  Nutmeg powder 豆蔻粉

1/2 tsp  Allspice ( optional)香料

1 tsp     Vanilla essence香草香精 

4  pcs   Eggs 鸡蛋  (grade A)


Cream Cheese Frosting 奶油奶酪霜:

110g    Unsalted butter (softed)软化无盐黄油   

250g    Cream cheese (softed) 软化奶油奶酪 

200g    Icing sugar (powdered sugar) 糖粉   

1 Tbsp  Lemon juice 柠檬汁


Directions:

For the cake:

1. Preheat the oven to 180C. Grease 10" cake pans.

2. Sift the flour, baking powder, baking soda, and cinnamon powder together in a bowl.

3. In a large bowl whisk together the oil, sugar, eggs, vanilla, and beat well. Then mix in the sifted flour mixture into the batter. 

4. Finally, add in the grated carrots, roasted walnut and raisins and mix until incorporated. 

5. Pour the batter into the pan. Place the pan in the middle rack of the oven and bake for about 40 to 45 mins and a toothpick inserted in the center comes out clean. Cool the cake before frost the cake. 


Cream cheese frosting:

1. Cream the cream cheese and butter together.

2. Slowly sift in the icing sugar, and continue beating until fully incorporated and smooth. Add in lemon juice and beat well.
