韩式泡菜煎饼 Kimchi Pancakes(Kimchijeon)


准备材料:

泡菜(多少依自己喜好)和 2 汤匙泡菜盐水

一个鸡蛋

1/2杯  面粉

1 杯  酸种酵母(sourdough discard)

适量清水

盐 1/2tsp

糖 1/2tsp

红辣椒(切粒)


做法:

1  将泡菜切碎,与所有食材一起放入碗中,搅拌均匀,制成稀面糊。 静置 10 分钟(可省略此步骤)。

2  平底锅注少许油烧热,开小火,倒入面糊摊开成圆饼。

3  待饼能转动时,或当薄饼的颜色变深橘色时,可以开始翻面

4  将薄饼按压几次,以确保它更松脆,可以根据自己喜欢的焦嫩程度,用小火慢煎成两面金黄即可。


Kimchi Pancakes


Prepare ingredients:

Some Kimchi and 2 Tbsp of kimchi brine

An egg

1/2 cup flour

1 cup sourdough discard

Appropriate amount of water

Salt 1/2tsp

Sugar 1/2tsp

Red chili (diced)


Method:

1. Chop kimchi, put it in a bowl with all ingredients and mix well to make a thin batter. Let stand for 10 minutes ( optional).

2. Heat a little oil in a frying pan, turn on to low heat, pour in the batter and spread it out into round cakes.

3. When the pancake can be turned, or when the pancake turns dark orange in color, you can start flip over.

4. Press the pancake a few times to make it is more crispy. Fry it until golden brown on both sides.
