橙薯椰糖椰丝红龟粿 Orange Sweet Potato Shredded Coconut Ang Ku Kuih

There was a bowl of steamed orange sweet potato in the fridge, so I decided to make this nyonya kuih. 

I like all kind of nyonya kuihs. This is one of my favorite nyonya kuihs, whether it is stuffed with shredded coconut, peanuts, or green bean paste, I like them all!😄

橙薯椰糖椰丝红龟粿  Orange Sweet Potato Shredded Coconut Ang Ku Kuih


Ingredients:

Dough 面团 :

100g Orange Sweet potato 橙番薯

150g Glutinous rice flour 糯米粉

100ml Water 水

15g Sugar 糖

1 Tbsp Oil  油


Palm Sugar Coconut Fillings 椰糖椰丝馅料 :

280g-300g   Shredded coconut 椰丝 ( 1 medium coconut)

3     Pandan Leaves  斑斓片

100g    Palm Sugar  椰糖

20g      Sugar

1/4  tsp   Salt  盐

1/4 cup  Water


Palm Sugar Coconut Filling making:

1. Dissolve gula melaka, sugar and  pandan leaf in water and boil under medium heat. Let the ingredients boil for a while in order for the fragrance of the pandan leaf to infuse into the sauce. Stir regularly.

2. Stir in the grated coconut and salt, mix well.

3. Stirring regularly till the coconut mixture becomes slightly drier.

4. Remove the pandan leaf and transfer the sweetened coconut to a bowl to cool down. Set aside.


Preparing Orange sweet potato dough skin:

1. Steam orange sweet potato over medium heat for 15 minutes, until very soft.

2. Mash steamed orange sweet potato with a fork, set aside to cool.

3. Blend the mashed orange sweet potato with water until blended.

4. Add in blended orange sweet potato in glutinous rice flour, use a fork to stir it then use hands mix well. Take out about 30-40g dough and cook in a pot of boiling water until cooked. Drained and add into the dough. Knead until a smooth dough is formed. 

5. Add in water or glutinous rice flour if needed, knead until a smooth dough is formed. Add in 1 tbsp cooking oil, knead until well blended.

6. Divide dough into 30g each. 

7. Wrap in filling and use mold to make shape.

8. Steam on medium heat for 8 minutes. 


Tip:

  • Add the cooked dough into the dough is to get a chewy texture after steamed the kuih.将煮熟的面团加入面团中,蒸熟后会变得有嚼劲。
