No Bake Mango Yogurt Mousse Cake 芒果酸奶慕斯蛋糕

Since I still have a tub of  Greek yogurt in the fridge, so I decided to make this delightful mango yogurt mousse cake for dessert. This recipe is easy to prepare and the cake came out perfect. 



No Bake Mango Yogurt Mousse Cake 芒果酸奶慕斯蛋糕


Ingredients: ( 6" springform pan)

First Layer :

Digestive Biscuits - 200g

Melted Butter - 50 g to 100 g


Second Layer:

Mango Puree - 1 cup

Yogurt - 300 ml

Gelatin - 10g 

Water  1/4 cup

Sugar - 1/4 cup

Condensed Milk - 1/2 cup ( I used 1/4 cup)

Whipping Cream - 1 cup ( I used 250ml)


Third Layer :

Mango Puree - 1 cup ( I used 1/2 cup)

Gelatin - 5 g  ( I used 3g)

Sugar - 1/4 cup ( I used 2 Tbsps)

Water - 1/4 cup ( I used half of 1/4 cup)

Lemon juice - 2 tsps


Decorations: ( Optional)

Some mango slices for making mango flowers on the cake.

Some strawberries


Method:

For making the base:

1. Crush the biscuits and mix with the melted butter until well combined.

2. Add the mixture to the base of a spring form pan. Spread the biscuits filling and using a spoon or spatula, press it down until it’s smooth and flat. Chilled.


For making the Mango yogurt mousse filling:

1. Whisk the whipping cream until soft peak form. Set aside.

2. In a bowl, combine the gelatin and the water. Mix until they are combined and microwave for 10 seconds.

3. Add the sugar into the yogurt and lightly stir the yogurt. Add in mango puree and condensed milk. Whisk well.

4.  Add in the desolved gelatin mixture and mix it well. 

5.  Add in 1/3 portion of whipped cream into mango yogurt mixture, mix well. Then pour into remaining whipped cream and mix well.

6. Pour the Mango yogurt mixture into the mould. Smooth it out. Chill in the fridge.


For making Mango Jelly:

1. Add the gelatin powder in water and stir to desolve the gelatin. 

2. Heat the mango puree and sugar on low heat until slightly boil. Then off the heat. Sieve the mango puree and add the desolved gelatin and lemon juice into mango puree, and mix well.

3. Pour onto the set cake and decorate the cake with some fresh mango slices and strawberries.

4. Chill the cake for 3-4 hours until it's set or overnight.


Note:

You may decorate the cake with mango slices the next day.
