These Yogurt Cupcakes are made with Greek yogurt. They are moist, and yummy! Topped with cream cheese frosting, these cupcakes would make a wonderful treat for Christmas's Eve or New Year's Eve.

Yogurt Cupcakes 酸奶纸杯蛋糕
Ingredients:
40g Vegetable oil
70g Plain Greek Yogurt
2Tbsp Milk
3 Eggs (Separated yolk and white)
70g Cake Flour
10g Corn starch
45g Sugar
Few drops of lemon juice OR vinegar
Method:
1. In a large bowl, add and veg oil, yogurt, milk and egg yolks. Mix well.
2. Sift in cake flour and corn starch. Stir to combine and set aside.
3. In another large bowl, add lemon juice into egg whites. (This is to stablized the meringue)
4. With a hand mixer, on low speed, beat egg white until foamy.
5. Add sugar in 3 batches and continue to beat until stiff peaks form.
6. Fold meringue into batter, 1/3 meringue at a time.
7. Transfer batter into muffin tin lined with muffin cup.
8. Bake in preheated oven. 140°C for 20minutes. 160°C for 5-10 minutes (Until top is brown)
9. Removed from oven, drop the baking tray on counter to release hot air.
10. Transfer Cupcakes onto a cooling rack.
