Sweet Potato Doughnuts /Kuih Keria/番薯甜甜圈

This is a childhood memory~ I remember seeing sweet potato donuts at a Malay stall, I will definitely buy it. I just like the icing on the sweet potato, the outer layer is crispy, the inside is soft, so delicious!

这是儿时记忆~ 记得以前看到马来档口卖的番薯甜甜圈,一定会买来吃。就是喜欢甜甜的番薯裹上的糖霜,外层酥脆,内里松软,好好吃噢!



Sweet Potato Doughnuts /Kuih Keria/番薯甜甜圈


Ingredients A (to make 18 pcs) 材料 A 分量( 可做18粒):

500g Yellow sweet potato  500克 黄番薯 

½ tsp salt   ½ 茶匙盐  

Proper Amount of  Warm water 适量 温水  


Ingredients B 材料 B:  

80~100g all purpose flour 80~100克 面粉

1 tbsp  rice flour  1汤匙 粘米粉

*Dash of  Oil (Use when shaping) 少许油 (塑形时用)


Ingredients C 材料 C:  

3 Tbsp  sugar 3汤匙 白糖

1½  Tbsp Warm water  1½汤匙  温水 

*1 Tbsp all purpose flour 1汤匙 面粉


Method:

1. Boil the ingredients A for 15 minutes. Drained and let cool.

2. Mix in ingredients B in few batches and knead until a soft dough is formed.

3. Heat up some oil for frying the doughnuts. Test with a chopstick, when dip in the oil, a little bubbles appeared around the chopstick. It's ready to fry the doughnuts in medium low heat.

4. Once the doughnut are lightly brown colour, flip the doughnuts and continue to fry. After the doughnuts are lightly brown, drained. Heat up the oil in high heat, put in the drained doughnuts and fry again (less than 1/2 minute). Off the heat and drained the doughnuts.

5. Continue to fry the second batch of doughnuts ( don't turn on the heat yet becauce the oil is still very hot). After the oilhas cool down a bit, turn on the heat in medium low heat.

6. Do the same method as first batch( step 4).

7. Remove the oil form wok, put in ingredients C except the flour. Fry the sugar water in medium low heat until the sugar water bubbly and lighly thicken. 

8. Add in the doughnuts and keep tossing the doughnuts to coat the sugar evenly. Meanwhile, off the heat, add in some flour* and continue tossing. Once the sugar water are in white colour and dried, Dish up the doughnuts and let cool.


方法:

1. 将材料A煮沸15分钟。沥干并冷却。

2. 分几次加入材料B,揉成柔软的面团。

3. 烧热少许油,炸甜甜圈。用筷子试一下,筷子周围出现小气泡。以中小火炸甜甜圈。

4.待甜甜圈呈浅棕色后,将甜甜圈翻面继续炸。甜甜圈呈浅棕色后,沥干。用大火加热油,放入沥干的甜甜圈,再次翻炸(不到半分钟)。关火,把甜甜圈沥干。

5. 继续炸第二批甜甜圈(不要开火,因为油还很热)。待油稍凉后,开中小火。

6. 方法同第一批(步骤4)。

7. 把锅里的油取出,加入(除面粉外)材料C。用中小火将糖水炒至起泡并稍微变稠。

8. 加入甜甜圈,继续翻炒甜甜圈,让糖均匀裹上。同时,关火,加入一些面粉,继续翻拌。一旦糖水呈白色并干燥,将甜甜圈盛出并放凉。
