Swedish Chocolate Cake (Kladdkaka)瑞典巧克力蛋糕

Kladdkaka is a Swedish chocolate cake that is a cross between a fudge brownie and a molten lava cake. Dense, fudgy and gooey in the centre. By the way, Kladdkaka, which literally means "sticky cake".

This cake is absolutely amazing!  Great for birthday cake or tea time treats. If you prefer a fudge brownie and a molten lava cake. Dense, fudgy, and gooey in the centre, beware not to over-bake it !

If you want the center of the cake to be "sticky", the traditional "toothpick test" won't work. Just go according to the time and you should be fine. Don't be tempted to overbake the chocolate cake because you will lose the lovely sticky-ness in the middle.

In this recipe, I guessed I did too much whisking, thus creating a lighter batter. Ultimately, it's cause too much air in the batter, which causes a fluffy and cake-like interior. So, do not over whisking the batter.😅

The sweetness of the cake is just right for my taste. If you like the cake sweeter, you can add more sugar according to your taste. 








Swedish Chocolate Cake (Kladdkaka) 瑞典巧克力蛋糕

Ingredients:

3              Eggs

190 g      Sugar

1/4 tsp    Salt

90 g         All Purpose Flour 

40 g         Cocoa powder

160 g       Margarine/ Butter ( Melted)


Topping:

100 g      Choco Hazelnut Spread/Chocolate cream ( Heat in mocrowave for 10-20 seconds)


Method:

  1. Line bottom and sides of an 8-inch square baking pan with parchment paper; set aside.
  2. Pre-heat the oven at 180°C.
  3. Melt the butter in microwave for 20 seconds. Stir well.
  4. Whisk the egg and sugar until well combine.
  5. Add in all the dry ingredients to the egg mixure and whisk until it is lump free.
  6. Followed by vanilla essence and melted butter. Fold it with a spatula until well combine.
  7. Pour batter in the prepared pan and smooth out.
  8. Bake for 25- 30 minutes or until the top has hardened. The center should still be soft. 
  9. Remove from oven and allow cake to cool in cake pan for 5 minutes. Then remove the cake from the pan. 
  10. Pre-cut the cake and decorate the cake with Choco Hazelnut Spread or chocolate cream. Or dust the cake with cocoa powdered or icing powdered.


Notes:

  • If you want to make a classic kladdkaka: Just mix everything in a mixer bowl and whisk till all well combine and bake for 20-25 minutes.
  • I baked it for 30+ minutes so it seems over baked! In any case, the cake is still soft and moist. It's not fudgy, and gooey, more to a cakey type but I like it!
