Lemon Cake 柠檬蛋糕

It's been almost a month and I have never use my oven to bake cakes or bread! A few days ago, I baked a cheesecake  upon a friend's request. Today, I baked a lemon cake which was requested by my daughter and also I tried to get rid of my expired soon yogurt.

This Lemon cake is soft, moist and delicious. We like the sourness of lemon juice in this cake and the sweetness of lemon icing sugar glaze.




Lemon Cake 柠檬蛋糕


Ingredients:

120g     Butter(room temperature) 黄油(室温)

160g     Caster sugar 细砂糖

2            Eggs(room temperature) 鸡蛋(室温)

125g     Plain Yogurt 原味酸奶

220g     All purpose flour 中筋面粉

1 tsp     Baking powder 发粉

55g       Lemon juice 柠檬汁

55g       Milk 牛奶

Lemon zest (1 whole lemon) 柠檬皮(1整个柠檬)


Lemon glaze 柠檬糖霜:

80g      Icing Sugar 糖粉

25g      Lemon juice 柠檬汁


Directions:

1. Preheat oven to 190ºC. Grease and line a 20cm round cake pan with baking paper. 

2. Using an electric mixer, beat butter and sugar in a bowl until pale and creamy. 

3. Add eggs, beating well. Beat in the yogurt.

4. Sift flour over butter mixture, beating until well blended. Beat in the lemon zest, lemon juice, and milk.

5. Pour mixture into prepared pan, level surface. Bake for 40 - 45 minutes or until a skewer inserted at centre comes out clean. Stand cake in pan for 5 minutes, then turnout onto a wire rack to cool completely.

6. Meanwhile, to make lemon icing: sift icing sugar into a large bowl. Gradually add juice, stirring until smooth.

7. Spread lemon icing over cooled cake, allowing it to drip down the sides. Serve sprinkled with zest.


蛋糕制作步骤: 

1.将烤箱预热至190ºC。在一个8寸的圆形蛋糕盘上抹上油并放上烘培纸。

2.使用电动搅拌机搅拌黄油和糖,直至呈乳白色状态。

3.加入鸡蛋,搅拌均匀。再加入酸奶拌打均匀。

4.把过筛面粉加入,搅拌直至充分混合。加入柠檬皮屑,柠檬汁和牛奶,搅拌均匀。

5.将面糊倒入准备好的盘中,送入烤箱烘烤40 - 45分钟,或直到插入中心的竹签取出干净为止。将蛋糕置在盘中5分钟,然后将其取出放在铁丝架上待完全冷却。

6.同时,等待蛋糕冷却时做柠檬糖霜;将糖粉筛入大碗中。逐渐加入柠檬汁,搅拌至均匀。

7.将柠檬糖霜撒在冷却的蛋糕上,让其滴落到两侧。再撒上一些柠檬皮点缀。
