Today is Halloween celebrations. In order to celebrate this day, I made pumpkin soup. Yeah, Pumpkin😘. We love pumpkin!
My pumpkin soup is easy to make, because everything is thrown into a pot; boiled; blended; boiled and served.
I can’t say that my version is exactly the same, but it is equally satisfying and fresh. It’s utterly delicious in its own right.
Pumpkin soup is so good on its own, it does’t really need ‘help’ with any additional ingredients. However, for an incredible depth of flavour, adding a swirl of cream adds extra richness to the soup.
Pumpkin Soup南瓜汤
Ingredients:
An appropriate amount of water ( depending on the consistency of soup that you like)
1 whole pcs Pumpkin (medium sized, diced)
1 large pcs Bombay onion (chopped)
2-3 pcs Potatoes (medium sized, diced )
2 Tbsps Chopped Garlic
2 cm pcs Ginger (chopped)
Seasoning:( It depend upon the mass)
2 tsps Chicken stock (optional)
2 tsps Salt
2 tsps Black pepper
1 tsp Onion powder
1 tsp Mix herd
Garnishes:(optional)
Whipping cream/ thickened cream
Basil leaves
Bacon bits
Directions:
- Saute the chopped garlic and ginger.
- Add in water, pumpkin, onion and potato. Bring to a boil, reduce heat to low, and simmer for 15 minutes.
- Puree the soup in small batches using a blender.
- Return to pan and bring to a boil again. Reduce heat to low, add in seasoning and simmer for another 15 minutes, uncovered.
- Pour into soup bowls and garnish (optional).
Notes:
- If you preferred thick soup just add in less water.
- If the soup are too watery, just add in some stach water to thicken the soup.
- The seasonings in these soups can be adjusted to your taste.
- While the soup is boiling on the stove, fry some bacon bits in a small pan. Then, pour some of the bacon fat into the soup for added flavour, and serve bowls of soup with crispy bacon bits on top.
