No oven? No problem! This no-bake dessert require zero baking so they’re perfect for the warmer months or when you don’t feel like spending hours in the kitchen. And, cool dessert is great too!
This Orange Yogurt Mousse Cake is light, citrusy, not too sweet and not too heavy because the mousse consists partly of yoghurt. This cool dessert is very refreshing, from the yogurt and the orange! 😋
Orange Yogurt Mousse Cake 香橙酸奶慕斯蛋糕
Ingredients (15cm pan):
Orange Syrup and Candied Orange slices:
300g Water
150g Sugar
1 Orange ( Sliced)
Crust:
140g Digestive Biscuits
70g Melted Butter
1 tbsp Sugar
Orange Yogurt Mouse filling:
200g Plain Yogurt
200g Whipping Cream
15g Icing Sugar
3tsps Gelatin Powder
2+1/2 Tbsps Hot water
6pcs Candied Orange slices
Orange Jelly:
100ml Fresh Orange Juice
50g Orange Syrup
8g Gelatin Powder
2 Tbsps Cold Water
Method:
1. For making Orange Syrup:
2. Boil the water and sugar in a pot.
3. Once it boil, turn to medium low heat. Add in orange slices and cook until the orange skins are appear translucent around the rinds. Off the heat.
4. Take out the orange slices and dry them on a kitchen paper.
5. Keep the syrup and let cool.
6. Place the candied orange slices on the biscuit base.
*You can make this a day ahead.
For making the base:
1. Crush the biscuits and mix with the melted butter and sugar until well combined.
2. Add the mixture to the base of a spring form pan. Spread the biscuits filling and using a spoon or spatula, press it down until it’s smooth and flat. Chilled.
For making the Orange yogurt mouse filling:
1. In a separate bowl, combine the gelatin and the hot water. Mix until they are combined and sit in a bowl of hot water to desolve the gelatin.
2. Lightly stir the yogurt.
3. Using an electric mixer or whisk, beat the whipping cream with sugar till soft firmed peak.
4. Add the whipped cream into the yogurt. Using a spatula, fold everything together so it’s well combined and smooth.
5. Add in the desolved gelatin mixture and mix it well.
6. Pour the Orange yogurt mixture over the biscuits base. Smooth it out. Chilled for 3-4 hours or overnight.
For making Orange Jelly:
1. Add the gelatin powder into cold water and stir until the gelatin powder are disolved.
2. Boil the orange juice and syrup. Once it boiled, off the heat. Pour the disolved gelatin into orange juice and mix well.
2. Decorate the cake with some fresh orange slices onto the set cake. Then pour in the Orange Jelly liquid and chill it until it's set.
