Strawberry Daifuku草莓大福

They are 4 large strawberries still sitting in the fridge, so I used them to make these delicious snack~~ Strawberry Daifuku. It's simple to make. Let's start to make it! GO..go..go..!😉

Strawberry Daifuku草莓大福

Ingredients 材料:

Glutinous rice flour 糯米粉 80g

Corn flour 玉米粉 20g

Sugar 糖粉 30g

Milk 牛奶 140g

Vegetable oil 植物油 20g

Filling 内陷:

  • Red Bean Paste 120g ~4 servings (30g/piece)
  • 豆沙馅 120g ~ 4份(30g/粒)

  • Large strawberries  4 pieces
  • 大草莓 4颗

Method:

1. Mix  all ingredients except the oil. Mix well.

2. Add in oil and mix well.

3. Pour into a shallow plass pan or plate.

4. Steam on Medium heat for 20 minutes or until it's cooked.

5. Remove from heat and use a spatula to cut and press the steamed mochi. When it is slightly cooler, wear disposable gloves to handle it. Knead it until you get a smooth dough. Wrap it in cling wrap and set aside.

6. Divide the red bean paste (30g each) and wrap in a piece of strawberry.

7. Divide the mochi dough (30g each). Flaten it with a rolling pin, use some cooked glutinious rice flour to avoid stickiness. Wrap in filling and round it. Dust some cooked glutinious rice flour and place onto a paper cup.

8. You can eat it straight or chill it before eating. Enjoy!

Note:

  • You can also eat mochi without filling, just cut the dough into small pieces and coat them with roasted soybean powder (kinako) or ground peanut. Add some icing sugar if it’s desired. They are equally delicious.

Happy Making!
