Red Velvet Cake 红色天鹅绒蛋糕

Last minute to decide to make this red velvet cake for my elder son. Today is his birthday, hope he will like it!

Red Velvet Cake 红色天鹅绒蛋糕

Ingredient:

Sponge Cake (35 x 22 cm pan)

4       Large eggs 

40g  Oil

50g   Butter milk ( milk + 1 tsp lemon juice, sit for 30 mins)

85g  Cake flour

5g     Cocoa powder

60g    Sugar

1/2 tsp Instant coffee + 1Tbsp hot water

1 tsp Red velvet emulco


Cream cheese frosting:

200g   Cream cheese

50g     Softened unsalted butter

100g   Whipping cream

60g     Powdered sugar

1 tsp   Lemon juice


Directions:

1. Preheat oven to 180C.

2. In a large bowl sift flour and cocoa powder. Stir and set aside.

3. In a separate large bowl, beat oil, buttermilk and eggs until combined. Gradually add the dry ingredients and mix after each addition until well combined. Add coffee mixture, red velvet emulco  and mix well.

4. Beat the egg whites until soft peak. Mix in egg batter and mix well.

5. Pour the batter into a baking pan lined with parchment paper. 

6. Bake 15-17 minutes, until a toothpick inserted into the center comes out clean. 

7. Remove from the pan, then let cool completely. 


Make the frosting: 

  • In a large bowl, beat cream cheese, butter, powdered sugar and lemon juice. Beat until smooth and creamy. 
  • In a large bowl, beat whipping cream until stiff, mix in cream cheese batter and mix well. Scoop in a piping bag.


Assemble the cake: 

  • Cut the the cake edges and make crumbs. 
  • Cut the cake into 3 equal size, set aside. 
  • Place one cake layer as base, spread a layer of frosting, place the second layer of cake on top of the frosting and spread a layer of frosting. Place the third layer of cake on top of the frosting and frost the top and sides, decorate the cake with the crumbs.
