Cranberry Cream Cheese Buns & Parmesan Cheddar Cheese Buns 蔓越莓奶油芝士面包和帕玛森切达芝士面包

As usual, I baked some breads for my family. They can eat it for breakfast or afternoon tea. Since my last baked was Rotiboy and Garlic Buns, so, I baked a different flavour buns this time.

I just love the combined flavours of parmesan and cheddar cheeses. They go so well together that I’ve decided to make buns stuffed with cheddar cheese and topped with parmesan cheese. 😘

My kids love the cranberry cream cheese buns which are fluffy, lightly savoury and most importantly, soft! This is because I used water roux method to make this bun. The cream cheese paired with sweet and sour cranberries, extremely tasty.😉








Cranberry Cream Cheese Buns & Parmesan Cheddar Cheese Buns

蔓越莓奶油芝士面包和帕玛森切达芝士面包


Ingredients:

200g  Bread Flour 面包粉

60g    All purpose flour 通用面粉

25g    Caster sugar 细砂糖

150g   Levain   酸种 (Use at peak)

50ml  Water   水

50ml   Milk     牛奶

1g       Dry yeast  干酵母( Optional)

4g       Salt  盐

25g   Unsalted Butter (soften)   无盐黄油(软化)


Filling part夹心部分: 

100g  Creme cheese奶油奶酪 

12g    Powdered sugar 糖粉 

30g    Dried cranberry蔓越莓果干 

Shredded cheddar cheese (Appropriate amount)切达干酪丝(适量))

Parmesan Cheese  (Appropriate amount)巴马干酪(适量)


Method:

1. Mix all the ingredients except butter. Knead untill a soft dough forms.

2. Add in butter and knead unill the dough is visibly smooth and elastic. 

3. Cover the kneaded dough and proof in the fridge overnight.

4. Next day, take out the dough and rest in room temperature for 2 hours.

5. Without kneading, divide the dough into 14 portions (each about 45g). Round it with the palm of your hand and cover it with a cloth or plastic wrap and rest for 15 minutes. 

6. Mix Cream cheese and powdered sugar, uae double boiling method and keep stirring until a smooth cream cheese paste is formed. Turn off heat and set aside.

7. For Cranberry cream cheese buns: Roll out the dough into a square shape, smear some cream cheese, sprinkle with dried cranberries and roll up.

8. For Parmesan cheddar ceese buns: Roll out the dough into a square shape, put some shredded cheddar cheese, roll up. Spray some water on the surface and dip in parmesan cheese.

9. Second fermentation for 2 hours or till double in size, score the surface of the cranberry cream cheese dough, sprinkle some flour. 

10. Put in a preheated oven at 190℃ and bake for about 16-18 minutes or until the bread  surface becomes light golden brown. Let it cool down on rack.
