今天做经典苹果派。我采用了甜和脆口的红苹果来做。这个苹果派真的很好吃!酥脆金黄的派皮,内陷里充满着阵阵苹果和肉桂的香味!内陷里还加了香脆核桃,酸甜香脆,口感十足,实在太美味啦!😋

经典苹果派(8" 活底挞模)
派皮:
180克 无盐牛油(冷)
300克 普通面粉
15克 细纱糖
3克 盐
17-20克 冷水
做法 :
1. 用手把黄油,面粉,糖抓匀,搓成砂砂的小粒粒状。
2. 加入冷水,揉成面团。用保鲜膜包好放在冰箱里冷藏30分钟或一小时左右,备用。
苹果馅:
3个 大苹果(去皮切丁)
1/2 柠檬汁和 柠檬皮屑
30g 无盐黄油或有盐黄油
60g 红糖或细砂糖
1/4杯 水
1茶匙 肉桂
1汤匙 玉米淀粉
1g 盐
40克 烤香的核桃(切碎)
1个 鸡蛋(蛋液)
做法 :
1. 平底锅里放入牛油,加入苹果丁,翻炒。
2. 加入砂糖、柠檬汁、盐拌炒均匀。
3. 这时苹果开始渗出水,加入肉桂粉,拌匀。
4. 最后加入玉米粉炒至粘稠、收汁,盛起,放凉备用。
5. 在放入苹果馅之前,才加入烤香的核桃碎,拌匀。
制作苹果派:
- 预热烤箱190C。
- 从冰箱里取出派皮。分出2/3份做派底。撒上些面粉,把面粉擀开。
- 把擀薄的派皮铺在烤盘,清理掉多余的派皮。用叉子扎出洞,以防派皮烤时鼓起。烤约10-15分钟。待凉。
- 放上苹果馅,把剩余的一份派皮和用剩下的派皮擀开,切成均匀的细条,铺在苹果馅上面。
- 表层刷上蛋液,放入已预热的烤箱,以190C烘烤约30-35分钟或至表层金黄色即可。
Classic Apple Pie (8" loose bottom tart mould)
Pie Crust:
180g Unsalted Butter (Cold)
300g All Purpose Flour
15g Castor Sugar
3g Salt
20g Cold Water
Method:
1. MIx the butter, flour, and sugar with your hands, and knead them into small grains of sand.
2. Add cold water and knead into a dough. Wrap it in plastic wrap and put it in the refrigerator for 30 minutes or an hour, set aside.
Apple Filling:
3pcs Big apples ( peeled and diced )
Juice and zest of 1/2 a lemon
30g Unsalted butter or Salted Butter
60g Brown Sugar or Caster sugar
20ml Water
1 tsp Cinnamon
1 Tbsp Corn Starch
40g Toasted Walnuts( chopped)
1 Egg (Egg Wash)
Method:
1. Put butter in a saucepan, add diced apples, and stir fry.
2. Add sugar, lemon juice, and salt, stir and fry evenly.
3. At this time, the apple begins to seep water, add cinnamon powder, and mix well.
4. Finally, add corn flour and stir-fry until it is sticky and the juice is thicken. Dish up and let it cool.
5. Before adding the apple filling, add the toasted walnuts and mix well.
To make the apple pie:
- Preheat the oven to 190C.
- Remove the pie crust from the refrigerator. Divide 2/3 of the dough as the base. Sprinkle some flour and roll out the dough.
- Put the rolled pie crust on the baking tray and clean up the excess pie crust. Use a fork to make holes to prevent the pie crust from bulging when baking. Bake for about 10-15 minutes. Let it cool.
- Put in the apple filling. Roll out the remaining portion of the pie dough, cut into even thin strips, and spread on top of the apple filling.
- Brush egg liquid on the surface, put it into the preheated oven, and bake at 190C for about 30-35 minutes or until the surface is golden brown.
Notes:
- 收藏方式:凉透,收在密封容器,室温可存留2-3天,收冰箱存留一个星期左右,吃前toaster弄热温吃。
- Storage Method: cool thoroughly, store in an airtight container, keep at room temperature for 2-3 days, store in the normal fridge for about a week, reheat with toaster, eat warm.
