There are two bananas still siting on the counter... so I use them to make muffins before they are going to spoil. These muffins are so moist and full of flavor! There is absolutely no need for a lot of sugar to make these muffins delicious... because they have bananas and chocolate chips. I just added 1/2 cup of sugar, which turned out perfect! If you like it sweeter, you can add in more sugar, perhaps add in another 1/4 cup more, perfect!
Chocolate Banana Muffins 巧克力香蕉松饼 ( Yield:12 muffins )
Ingredient :
1 ½ cups all-purpose flour
¼ cup unsweetened cocoa powder
1 ½ tsps baking powder
½ tsp baking soda
½ tsp salt
½ cup white sugar
½ cup canola oil
1 egg
½ cup milk
1 tsp vanilla extract
1 tsp instant coffee or espresso + 3 tsps Hot water
2 ripe bananas, mashed
½ cup semisweet chocolate chips
Method:
- Preheat the oven to 350F (180C). Line a muffin tin with paper liners.
- Combine flour, cocoa, baking powder, baking soda, and salt in a large bowl, and sift. Set aside.
- Dissolve the instant coffee in hot water.
- Whisk sugar, oil, egg, milk, coffee and vanilla extract together in a separate bowl. Stir into flour mixture until just moistened. Fold in bananas and chocolate chips.
- Divide batter among the muffin cups, filling each about 3/4 full. Sprinkles some chocolate chips on top the batter(optional).
- Bake in the preheated oven for 20- 25 minutes.
