Strawberry Yogurt Mousse Cake草莓酸奶慕斯蛋糕

Today I’m making strawberry yogurt mousse cake and Blueberry Mousse cake!  Yes, I made two cakes in a row. There is a box of leftover whipped cream and I want to use it before it goes bad. Therefore, the best way to use up all the whipped cream is to make a mousse cake. 

I need a break from the oven, well, not that I feel bored, but sometimes, cool dessert is great too! This strawberry yogurt mousse cake is a non-bake cake. This cool dessert is very refreshing, from the yogurt and the strawberry, and as always it's very easy to make.

This cool dessert is great to serve in the afternoon, with a cup of tea or coffee, well, you can imagine, the softness of the mousse, with the tangy and sweet taste (not overly sweet), what a good day!







Strawberry Yogurt Mousse Cake草莓酸奶慕斯蛋糕

Ingredients (15cm pan):

Crust:

140g  Digestive Biscuits

40g    Melted butter ( Should used 70g butter instead of 40g butter)


Strawberry yogurt mouse filling:

200g       Strawberry Yogurt

200g       Whipping cream

15g         Icing Sugar

12g         Gelatin (3tsps) 

2+1/2 Tbsps  Hot water

3 - 5 pcs  Fresh Strawberry ( chopped)

5 - 6 pcs  Fresh Strawberry ( sliced)

20g          Strawberry preserve  (optional)~To get darker colour


Strawberry Jelly:

200ml water

10g  Instant jelly powder

25g sugar

40g Strawberry preserve


Method:

For making the base:

1. Crush the biscuits and mix with the melted butter until well combined.

2. Add the mixture to the base of a spring form pan lined with parchment papar. Spread the biscuits filling and using a spoon or spatula, press it down until it’s smooth and flat. Chilled.


For making the Strawberry yogurt mouse filling:

1. In a separate bowl, combine the gelatin and the hot water. Mix until they are combined and sit in a bowl of hot water to desolve the gelatin.

2. Lightly stir the yogurt. 

3. Using an electric mixer or whisk, beat the whipping cream with sugar till soft firmed peak.

4. Add the whipped cream into the yogurt. Using a spatula, fold everything together so it’s well combined and smooth.

5. Add the strawberry preserve and chopped strawberry into yogurt mixture and mix it well with a spatula.

6. Add in the desolved gelatin mixture and mix it well. 

7. Pour the strawberry yogurt mixture over the biscuits base. Smooth it out. Chilled for 3-4 hours.


For making strawberry Jelly:

1. Add the instant jelly powder, sugar  and water and mix well. Bring it to a boil and stir it till the sugar is desolved. Off the fire and remove from heat.

2. Add the strawberry preserve and stir until everything is incorporated. 

3. After the jelly mixture cools slightly, pour onto the set cake and chill it until it's set.

4. Then, decorate it with some fresh strawberries.

5. A delicious and light strawberry and yogurt mousse cake is done!
