~How to tell if dough is proofed or underproofed?


The Poke Test, which is an easy way to tell whether a shaped dough is ready for the oven, and it goes like this: Lightly oil or flour a finger, then give the dough a gentle but assertive poke:-

a) If the dough springs back right away, it’s an indication that the dough still need to rise for a few more minutes. 

b) If the dough springs back slowly,  indicates the dough is proofed and ready to go in the oven.

c) If the dough doesn’t spring back at all,  and the indentation remains, indicates the dough is over-proofed.
