Blueberry Mousse Cake 蓝莓慕斯蛋糕

Today I’m making Blueberry Mousse cake and strawberry yogurt mousse cake!  Yes, I made two cakes in a row. There is a box of leftover whipping cream and I want to use it before it goes bad. Therefore, the best way to use up all the whipped cream is to make a mousse cake. 

This Blueberry mousse cake is a non-baked cake. Furthermore,  it's very easy to make.  

This cool dessert is great to serve in the afternoon, with a cup of tea or coffee, well, you can imagine, the softness of the mousse, with a layer of jelly, so refreshing, what a good day!

Blueberry Mousse Cake 蓝莓慕斯蛋糕

Ingredients (15cm pan):

Crust:

133g  Oreo Biscuits (one whole packet)

30g    Melted butter


Blueberry mouse filling:

250g       Whipping cream

15g         Icing Sugar

12g         Gelatin (3tsps) 

2+1/2 Tbsps  Hot water

80g         Blueberry puree


Clear Jelly:

200ml water

8g  Instant jelly powder

2g  Agar-agar powder ( Omit it or go for 1g instead)

25g sugar

1/2 tsp  Purple sweet potato powder ( To get purple colour)

A few drops of lemon juice


Method:

For making the base:

1. Crush the biscuits and mix with the melted butter until well combined.

2. Add the mixture to the base of a spring form pan lined with parchment papar. Spread the biscuits filling and using a spoon or spatula, press it down until it’s smooth and flat. Chilled.


For making the Blueberry mouse filling:

1. In a separate bowl, combine the gelatin and the hot water. Mix until they are combined and sit in a bowl of hot water to desolve the gelatin.

2. Using an electric mixer or whisk, beat the whipping cream with sugar till soft firmed peak.

3. Add the Blueberry puree and mix it well with a spatula, fold everything together so it’s well combined and smooth.

4. Add in the desolved gelatin mixture and mix it well. 

5. Pour the Blueberry mixture over the biscuits base. Smooth it out. Chilled for 3-4 hours.


For making clear Jelly:

1. Add the instant jelly powder, sugar, purple sweet potao powder and water and mix well. Bring it to a boil and stir it till the sugar is desolved. Off the fire and remove from heat.

2. Add a few drops of lemon juice and stir until everything is incorporated. You will see the colour change  from greyish colour to purplish. Magic happened! Hehehe...

3. After the jelly mixture cools slightly, pour half of the jelly mixture onto the set cake, and decorate it with some fresh Blueberries. Then, pour in the balance of jelly mixture. 

4. Then, chill it until it's set.

5.  A delicious and light Blueberry Mousse Cake is done!
