Sourdough Sandwich Loaf

 Made loaf again...😉 The sandwich loaf that I made earlier( three days ago), and I used it to make sandwich for dinner. Looks yummy right!! The bread is still soft after three days...😊

Sourdough Sandwich Loaf

Ingredients:

200g  Bread Flour  面包粉

60g  All purpose flour  通用面粉

25g  Caster sugar  细砂糖

150g  Levain   酸种 (Use at peak)

50ml  Water   水

50ml   Milk     牛奶

1g  Dry yeast   干酵母 ( Optional)

5g   Salt   盐

1pc   Egg  鸡蛋

25g   Unsalted Butter (soften)  无盐黄油(软化)


Method:

1. First build the levain and leave it to rise to peak.

2. Add the levain to all the ingredients (except butter) and knead until it comes together in a ball.

3. Add the butter slowly and continue kneading the dough until it is smooth, shiny and elastic.

4. Round the dough and leave at the counter top at room temperature for 15 mins.

5. Transfer the dough to a clean floured surface then divide into 2 equal portions. Round it and rest for 15 mins.

6. Shape the dough into your desired shape. Place in a greased Pullman tin. Cover and proof until the dough fills 90% of the loaf tin (about 1.5 -2 hrs). 

7. Bake the bread in the preheated oven at 180°C for 35 to 40 minutes.
