Marble Butter Cake with brandy 大理石白兰地黄牛油蛋糕

It has been quite some time that I didn't bake Marble butter cake. This recipe is super easy and simple to make. You’ll love how soft, tender, and moist this marble cake is, and perfect for any time of day.

This Marble butter cake is soft and fluffy texture. This Marble cake comes with a good mixture of vanilla and chocolate portions, yet a slight taste of brandy too. It becomes even softer and more fragrant overnight!😘

Secondly, this cake requires “marbling” which is distinctive of the Marble Cake. Be careful not to over-marble the batters or the flavors will get muddled; a few swirls around the pan with a knife will do the trick.😉

Marble Butter Cake with brandy 大理石白兰地黄牛油蛋糕  


Ingredients: (7" square tin)

200g butter

170g sugar

4  eggs (grade A)

1 tbsp brandy

1 tsp vanilla extract

200g superfine cake flour (sifted twice)

60ml milk

2 tbsp cocoa powder

1 tbsp hot water


Method:

  1. Preheat oven 180C. Line the base of baking tin and grease the sides with butter.
  2. Beat butter and sugar on high speed till creamy.  Add in the vanilla and brandy.
  3. Add in egg one at a time. Beat well after each addition of egg.
  4. Add in half the flour and mix well on low speed.  Add in half the milk and mix well. Repeat this.
  5. Prepare the chocolate paste by adding hot water to the cocoa powder.
  6. Scoop one rice bowl of the cake mixture and add in the chocolate paste. Mix well.
  7. Pour some butter cake mixture into baking tin add in dollops of chocolate mixture then top it with the rest of butter mixture. Use a clean knife to swirl the cake mixture.
  8. Reduce oven temperature to 160C and pop in the cake tin. Bake for about 50 - 60 minutes.
